The Fatz Rock-N-Bowls menu has been carefully curated by award-winning Chef, Brian Dukes, and features many innovative, chef-inspired dishes using fresh, local and regional ingredients that are served up to satisfy.

“Fatz guests love our World Famous Calabash Chicken, and we are excited to bring them new ways to enjoy it,” said Vice President of Culinary, Brian Dukes.  “Our lasagna is made fresh in-house with a recipe that only Fatz could make. We start with a base of ricotta cheese, fresh basil, and parmesan. Then we add eggs to make it rise when baked with a light, fluffy consistency. Then we build layers of lasagna noodles, cheese, marinara and our housemade Calabash chicken tenders into sky-high masterpiece. Then, it’s garnished with two Calabash chicken tenders and fresh parsley. It’s a wow.”

The new Rock-N-Bowls menu not only features delicious pasta dishes, but a new dessert, drink and starters, as well. The full menu includes:

Calabash Chicken Parmesan – World Famous Calabash Chicken served over penne pasta tossed in house made marinara and topped with gooey, melted Italian cheese.

Grandma’s Calabash Lasagna – Classic lasagna recipe stacked high with World Famous Calabash Chicken in layers of creamy ricotta, house made marinara, mozzarella and parmesan cheeses with a generous garnish of two Calabash chicken tenders and fresh basil.

Chicken Penne Pasta Alfredo – A match made in pasta heaven, World Famous Calabash Chicken, fried or grilled, over creamy penne pasta Alfredo garnished with parmesan cheese.

Tuscan Shrimp & Chicken Pasta – A dynamic duo of grilled shrimp and tender chicken tossed with creamy marinara, spinach and a blend of mushrooms and peppers.

Mega Meatballs & Marinara – Giant, hand-formed Italian-style meatballs served with a rich tomato sauce over penne pasta.

Crispy Fried Cheese – A crowd favorite, crispy, golden-fried mozzarella cheese, topped with parmesan. Served with housemade marinara sauce.
